„I’ve been very lucky that my parents supported me by sending me abroad to study“ – says Zoltán Heimann.
After the initial traineeships in Alto Adige and several Hungarian wineries, the son of Ágnes and Zoltán Heimann finished his winemaking studies in Geisenheim, Montpellier and Udine. Further summer- and harvest internships followed at Caiarossa in Tuscany, Clemens Busch at the Mosel and Mac Forbes in the Australian Yarra-valley. The unmistakable taste of an origin intrigued him evermore.
After returning to his homeland in the southern Hungarian town of Szekszárd, it rapidly became obvious, that recreating the lineup of classical cuvées of the Heimann Family Winery will not be enough for Zoltán. He got right down to the autochthonous expression of the region. The delicate Kadarka and spicy Kékfrankos provide him with best material.
Szekszárd Terroir
At the verge of two strikingly different landscapes, Szekszárd is a historic red wine making region.
The Heimann Family vineyards are located on the first hills of the Transdanubian Hills, also called Pannonian Hills. Typical loess soils with lime particles lead to a ripe, mellow fruit profile with soft tannins and a fine, albeit not excessive acidity. At certain vineyard sites, shallow layers of red and brown clay induce more stress in the vines’ roots. The result of these factors is the development of a bit more coarse, quite refreshing tannin.
The Large Plain starts at the foothills of our region, spreading out towards the East. The gradually desertifying vast Plain has a strong influence on the vineyards overlooking it: hot air waves are streaming in every morning, quickly warming up the exposed sites. More protected sites show a greater temperature difference between night and day, giving wines with a delicate, more playful, faster ripening character.

Viticulture
Growing the grapes to yield delicate wines with a strong signature
May it sound like a cliché, Heimanns believe that the creation of great wines must be grounded in viticulture. Ágnes and Zoltán Heimann have quit using insecticides and herbicides in the early 2000’s. First experiments in converting to organic viticulture started in 2014, with gradually certificating of all their 98 900 vines on 22 hectares. First certified organic wines are bound to hit the market starting the 2023 vintage.

Heimanns are committed to qualitative manual labour and therefore keep on maintaining a small, but mighty own vineyard crew.
Upon a selective manual harvest into small boxes, grapes are transferred into the fermentation vats. Large beton tanks as well as flexible, small plastic fermenters are used. Use of ambient yeast is preferred, often with the use of pied-de-cuve (own starter culture) inoculation.
To emphasize varietal character and give the wines a kick of bright, elevated aroma profile, as well as a gastronomic tannin backbone, 20-40% of whole bunches are used during the fermentation and skin-extraction phase. Pressing is solely done with large plastic boxes, to avoid pumping of the fermented marc, and especially stalks.
Aging of the Heimann Fiai wines is intentionally de-emphasized. Neutral, large, traditional Hungarian barrels (size 500 to 1000 liters), clay amphorae, as well as recently beton tanks are used to stabilize the wines. Sulphur-dioxide is used in very low quantities. Bottling is performed after 10-15 months of aging, without fining and often without filtration.
The traditional aging cellar of the Heimann Family Estate was built in 1996-97 by Ferenc Heimann (born 1956), the brother of Zoltán Senior. Reinvigorating the tradtition of the brick-built cellars, Ferenc has made a big impact on the architecture of the modern-day Hungarian wine.
