My grandfather once said, ‘A good wine has a long finish,’ sometime in the early 90s. I really liked that phrase, and I think it perfectly suits the first Bull’s Blood (Bikavér) I’ve made. In my opinion, Bikavér is not only a classic in name but also in style: its length of flavor comes from the interplay between tannins and fruity acids. At the forefront are the fruits of Kékfrankos, framed perfectly by aging in large barrels.
